At Restaurant Fiz in buzzy Tanjong Pagar, chef-owner Hafizzul Hashim skillfully blends traditional Malay cooking with modern refinement – think nasi lemak (fragrant rice cooked in coconut milk and pandan leaf) expressed as foamy espuma and deconstructed pisang goreng (banana fritters) for dessert.
Flavours from Southeast Asia are showcased through themed menus called Episodes. The first episode draws inspiration from the chef’s childhood growing up in the coastal town of Lumut in Perak, Malaysia. Expertly executed, it’s a strong start for the restaurant, which opened in June 2023 and seeks to honour traditional cooking techniques and the diverse heritage of the region.
