The minute you step into Wine RVLT’s grungy-cool space on Carpenter Street, the lively mood and insouciant artwork should clue you in: this is no garden-variety wine bar. There’s no leather bound wine list, for one. Instead, guests are encouraged to peruse the shelves stocked with easy-drinking, sustainably made wines that have been carefully curated by sommelier co-founders Alvin Gho and Ian Lim.
To complement the drinking experience, head chef Sunny Leong designsa culinary menu that refreshes every 4 months. Its first iteration, titled Treasures of the Sea, creatively highlighted seafood in plates such as the Sarawak laksa bouillabaisse with seasonal fish, and the masterful crystal bread with uni butternut squash and caviar.
