It’s one in a new wave of establishments putting a funky twist on traditional Chinese dishes and techniques, to brilliant effect. The décor is Instagrammable, the cocktails heady, the tunes just right – but most of all it’s the knockout plates that impress, such as the sensational wagyu short rib with green shallot kimchi, a soy glaze and an intoxicating jalapeño spread.
