Armed with a passion for exotic native ingredients, Jock Zonfrillo has travelled the globe and cooked alongside many indigenous tribes on popular television series, Nomad Chef. From diving for shellfish in the Faroe Islands to wrestling cattle from Vanuatu, these experiences have provided him with culinary knowledge and insight that he takes back to his restaurant in Adelaide.
In a special episode of the series on Discovery and TLC Asia, Zonfrillo goes on a mission to create three unique Singapore Airlines inflight meals inspired by his adventures in remote communities around the world.
Besides travelling to Milan and Shanghai (above) to work alongside top chefs from the Airline’s International Culinary Panel, Zonfrillo also tours the massive kitchens at SATS catering, where more than 55,000 inflight meals are prepared daily for the Airline.
“Space is a luxury in our busy kitchen back home. So on my travels, I’m always looking for creative ways to prepare food or speed things up,” he says.
