Hua Ting, Orchard Hotel Singapore


At the newly renovated Hua Ting at Orchard Hotel, guests can toss to a prosperous year with the Tea Cured Fresh Salmon ‘Lo Hei’ paired with Passionfruit Sauce and Yuzu Pearls. Perfumed with hints of aromatic tea, the salmon slices are accompanied with mesclun greens, shredded radish, carrot, red ginger and sweet potato crisps, and topped with house-made passionfruit sauce and yuzu pearls for a burst of tanginess.

For a luxurious yu sheng, revel in the Live Australian Lobster, Abalone and Sea Urchin Lo Hei. Other decadent seafood variations include Fresh Toro Lo Hei; Sliced Abalone Lo Hei; and Fresh Hamachi Lo Hei. Those who fancy a healthier vegetarian alternative may opt for the Organic Seasonal Greens Lo Hei served with Passionfruit Sauce.

This year, Szechuan Court’s Prosperity Yu Sheng platter features colourful vegetable julienne complemented by generous portions of seafood such as snow crab, fresh sashimi salmon, abalone or lobster. The ingredients are tossed with a homemade sauce of sweet plum and tangy kumquat. Vegetarians can also look out for the coconut pulp vegetarian abalone yu sheng. Available from now till March 2.
