World-renowned chef Gaggan Anand recently opened Mihara Tofuten in Bangkok, a restaurant that celebrates – and elevates – the humble tofu. Here are several fun facts about his latest venture.
The number of courses served at Mihara Tofuten’s omakase experience, which allows guests to sample various preparations of the ingredient: soy milk with yuzu jam; tofu sushi rolls; tofu slivers wrapped in wagyu beef; and more.
The volume of water that Mihara Tofuten imports from Japan each day in order to prepare the tofu, which is made from scratch in-house.
The year that Anand will pack up his knives, shutter his award-winning eponymous restaurant and get to work on a brand-new concept in Fukuoka, slated to open in 2021. The latter will be a collaboration with fellow chef Takeshi “Goh” Fukuyama, who is also Anand’s partner at Mihara Tofuten.
