For an icy cold treat to counteract the sweltering Singaporean heat, pop into artisanal gelato parlour Birds of Paradise in the picturesque Katong neighbourhood. Owner Edwin Lim – who was inspired by a revelatory experience he had at an ice cream shop in Berkeley, California, while living there in his twenties – quit his engineering job and opened the establishment in 2016. His sweet creations are inspired by Southeast Asian botanical ingredients, with the gelato made entirely from scratch. Flavours include spiced pear with star anise and cloves; pandan; strawberry basil; and white chrysanthemum, all of which pair beautifully with the homemade thyme-infused wafer cones.
