A sine qua non restaurant among Siem Reap’s multiplicitous array of eateries, Banllé’s vegetarian/vegan food carries immense kudos among residents and curious visitors, eager to sample the creative menu of Khmer/Western dishes. The fish and chips, for example, is rustled up using banana. The cosy indoor space, overseen by fast-operating all-female servers, looks out to a sublime garden that grows many of the ingredients; the kitchen is spearheaded by Mié Café alumnus Pola Siv (“Our garden is our fridge”).
