Featuring world-class guest chefs for 11 months of the year, the alumni list of Ikarus at Hangar-7 in Austria’s Salzburg airport is impressive: Rene Redzepi, Grant Achatz and Gaston Acurio, to name a few. In April, Ikarus will host Tanja Grandits. Her 1-Michelin-star Restaurant Stucki in Basel has a reputation for dishes that are built on coordinated colours and unusual but harmonious flavour combinations, like the fish with mint and avocado (right).
