This jetsetting lawyer-turned-hotelier has six award-winning boutique properties in Singapore, London and Shanghai, including the quirky Wanderlust on Dickson Road. He tells us what he loves about the Lion City.
SINGAPORE’S A FOODIE PARADISE – WHAT ARE SOME OF THE PLACES YOU LOVE?
Restaurant Andre at Bukit Pasoh. Chef Andre is such a creative spark and I love his porcini crisp amuse bouche and scallop ravioli. I also love going to Kha at Martin No. 38, a condominium along Martin Road, which offers great Thai food in a chic venue. The wagyu beef salad is sinfully good. As for local food, Tian Tian Chicken Rice at Maxwell Food Centre is a must-try.
WHAT’S YOUR CURRENT FAVOURITE BAR?
It’ll have to be 28 Hong Kong Street, a recently opened cocktail bar with a vibe that screams New York underground cool. Try their too-naughty-to-be-named cocktail made with Manuka honey vodka, umeshu (Japanese plum wine), Poire William, fresh lemon juice and a pickled ginger complete with a Hawaiian sea salt rim. Good luck finding the entrance though!
TELL US ABOUT YOUR FAVOURITE STORES.
I like C K Collection in Little India. They stock all kinds of crazy vintage things. I also like Books Actually and Strangelets – which also stocks interesting furnishings and accessories – located along Yong Siak Street.
WHAT’S ON YOUR ENTERTAINMENT CALENDAR IN JANUARY?
I’m really looking forward to catching pianist Melvyn Tan, who has two solo all-Debussy concerts at the National Museum of Singapore on January 5 and 6. I’ve caught him before but he has not played in Singapore for some time so this homecoming should be special.
