Work has taken Singapore nightlife doyen Dennis Foo from the distilleries of Scotland to the bars of Beijing. But every time he touches down at Singapore’s Changi Airport, he says the same three words: “Home sweet home”. He tells us why.
WHAT ARE SOME OF YOUR FAVOURITE PLACES TO NOSH AT?
I’ll definitely be frequenting Les Amis’ new Annam Vietnamese Cuisine at Shaw Centre. I especially enjoy chef Nguyen Quoc Nam’s garlic prawns, which are delicious. But an old favourite is still Da Paolo’s La Terrazza at Chip Bee Gardens in Holland Village. I love the Carpaccio di Manzo, which comprises thin slices of beef tenderloin served with wild rocket and parmesan shavings.
WHERE’S THE PLACE FOR THE PERFECT TIPPLE?
My current favourite drinking spot is the island bar at the recently revamped Dragonfly at St James Power Station. You’ll find me there five nights a week. Another bar I love hanging out at is Bodega Y Tapas at Orchard Hotel. It has a great wine list and the Jamon Iberico Bellota Joselito (cured for 48 months) goes perfectly with whisky.
WHICH HOTEL WOULD YOU RECOMMEND TO VISITORS?
The Shangri-La remains my favourite. It has been consistently operating at the 6-star level for many decades.
WHAT’S ON YOUR YEAR-END ENTERTAINMENT CALENDAR AND IN 2012?
I plan to catch Katherine Jenkins at the Esplanade on December 4 and Tan Dun: Martial Arts Trilogy in late January (January 27-28). Personally, 2012 is also going to be especially exciting because my biography Straight Up is due to be launched.
